Description
Pastry Demi-Chef De Partie must be proficient in all areas of the kitchen. responsible for the smooth operation of His section and maintaining the high standards of food quality set by the Pastry chef. He is
trusted to use professional discretion and prepared enough for each outlet thereby keeping food wastage
to a minimum. He communicates with the sous chef and pastry chef and checks the quality and quantity
of the Pastry/Bakery items. He is to remain calm under the service pressure and maintain a positive and
enthusiastic approach to his tasks.
Responsibilities
Operational
Make sure Pastry goods are secure and stored safely - always keep stock replenished to minimise waste
To work to specifications regarding portion size, quantity and quality as stated in recipe
To work with pastry chef in solving any continual bakery/Pastry operation problems
To delegate chores accordingly to all kitchen staff and ensure all portion sizes are consistent with daily function and outlets requirement
To maintain daily work lists to indicate which tasks must be done for each day
Make sure all Pastry equipment is in operational condition and regularly cleaned
To maintain pastry and bakery hygiene and safety standards via delegation to other staff members
Ensure high standards of hygiene, follow up the training for the staff members
Take an active involvement on the daily checking of hygiene records
Maintain high standards of grooming and personal presentation of the team
To report any equipment failure to Ex pastry chef and follow up with necessary action
To ensure correct produce rotation in main fridges
