Description:
Pastry Chef De Partie is responsible for the smooth operation of the Pastry and Bakery section and maintaining the high standards of food quality set by the Pastry chef. He is trusted to use professional discretion and prepare enough food for each shift, thereby keeping food wastage to a minimum. He must be proficient in all areas of the kitchen. He is a role model for the other Pastry cooks under his position in the brigade and should set a good example at all times, in regards to both job performance and positive outlook.
Responsibilities:
Operational
Develop your team and improve their performance through coaching and feedback, and create performance and development goals for colleagues
Train colleagues to make sure they deliver with compliance and to the standards we expect
Drive a great working environment for teams to thrive - linking up departments to create sense of one team
To motivate staff and alert pastry chef of any morale problems
To provide ex pastry chef with staff feedback regarding pastry and bakery operations
Reporting any staff problems to Ex pastry Chef
Make sure Pastry goods are secure and stored safely - always keep stock replenished to minimize waste
To check daily kitchen transfers and ensure they are logged into computer
To work with pastry chef in solving any continual bakery / pastry operation problems
To delegate chores accordingly to all kitchen staff and ensure all portion sizes are consistent with daily function and outlets requirement
To pass all information to following shift
Make sure all Pastry equipment is in operational condition and regularly cleaned
Checking daily function and outlets order for inconsistencies
